OMG, don't use Nurbs!!!!

Use bevel plus. You may have to go an move some vertices around if they bevel weird, but soooooo much better than that tutorial. I despise Nurbs :)

Yes it is a separate program. I think there are free ones out there but for a newbie I would suggest Adobe After Effects.

I always use the Bevel Plus tool under the surfaces menu. It is the easiest way to make text in maya as well it offers you many beveling options.

Well, you have to Batch Render out your animation. You can then check it with F-Check. That comes with Maya. It allows you tp preview your frames. It will not be real time though.
