well I'm going to assume that you are refering to keying which means that you already have your character rigged. the method of animation you probibly want to try is called "Pose to Pose" meaning...

by what you just mentioned you may want to try useing clusters. (animation>deform> create cluster) A cluster has its own transforms rotations values so you can move the vertex by moving its cluster....
