Select your particles, then choose Windows>Attribute Editor. Under one of the sections you will see a dropdown list with things like "cloud" and "sprite." You need to select the kind of particle rendering you want here. Different selections obviously will give different results when rendered. The default particles do not render at all I believe, so you almost always have to change this to something.
