Dog - Why Convert to Poly? Why Oh Why?

I'm on the 3rd video of the cartoon dog tutorial and everything was fine until we started converting to polys. Why do we convert to polys as so much rebuilding and shaping is required?

I've just finished the mouth but the nose and ears are driving me crazy!

See attached for current model.
