Maya 2020 fundamentals - modelling the real world
Get halfway through a model and find it's an unworkable mess? Can't add edge loops where you need them? Can't subdivide a mesh properly? If any of this sounds familiar check this course out.

I think I know whats happening. In polygon, it might be because you didn't merge a lot of the vertices along the edges where you're getting ovals. When converting from poly to subD, all the edges tend to curve around which might be the problem you're having. And if you can't merge the verts, you might need to change the normals so that they're facing the same way(outwards) then merge.
