I have just succeeded to make Maya 5 work and I know nothing about so I started learning from square 1. I've read in many sites that Maya isn't easy but so was the case when I started out with Rhino. I did export a Rhino object into Maya but it showed upside down.
So the 1st question is: How to make a cake slice solid pulled away from a cylinder?

different programs have different ways of calculating the XYZ directions, so models can be rotated weird when importing into different aps.
As for making a slice in a cylinder like that, you can use the Cut Faces tool to make two horizontal cuts, select those faces and Edit Polygons > Extract to seperate them from the model.
Then you can use the Append to polygon tool to fill in the top and bottom faces.
