Over the last couple of years UV layout in Maya has changed for the better. In this course we're going to be taking a look at some of those changes as we UV map an entire character

I want a smooth rounded edge

I would like to be able to add a (fillet) rounded edge to my objects. Is there a tool I can use without resorting to Smooth, which affects the whole object?

yeah, select the edge you want to smooth, and run Edit Polygons>Bevel.

Or just select the faces you want rounded and then Polygons->smooth.

Because of the versatility of said program, you'll just have to try them out and see what you like better.

Or even a combination of both which i find in a lot of cases works better as the bevel can sometimes give strange results, for me anyway. Try using a small bevel, say only 1 segment then smoothing.

Would Bevel Plus work?

By the way, the tutorial link isn't working.
