Default Lattice to keep eyes flat

I'm working on a cartoon character that has saucer shaped eyes and not round. Basically, I scaled in a sphere to get the shape. My question is can I use a lattice to keep the shape of the eyes when I animate them looking around? I can do this with a sphere but doing this with a flatter eye is a bit tricky.
