That outdoor campus looks familiar. You wouldnt be from the San Francisco Bay Area are you?

As for the video interlacing. I'm too noob for Maya to say with authority, but Lightwave (am i allowed to talk about that here?) has a toggle called "Field Rendering" which simulates the mixing of frames like your camera does. Try looking for that.
