I'd recommend the book Digital Lighting and Rendering by Jeremy Birn. It's a thorough explanation of lighting approaches. I'd say lighting for animation isn't too different from lighting for still images. You could light the scene considering just a single frame, and then determine whether there are changes to the lighting that need to be made for different parts of the shot (i.e. does it look good for the duration of the shot).
