Hm - I've always found poly proxy a pain because no matter what colors I used it was too cluttered and the update is slower. Have you thought of modeling in polys, periodically smoothing to check the geometry and then converting to subd nearer to the end?

I'm not really sure if that's usual workflow but it's one that works user added image
