There are lots of tutorials around regarding human modelling. You just need to do some looking. I have noticed 2 different processes for modeling humans: 1) Start with a polygon shape and divide and extrude faces to "mold" the shape into a human 2) Create a single polygon and build, polygon by polygon (extruding edges). Its just a head tutorial - but it's REALLY good. I would start with this one then use the other one for the remaining body) I've seen a good tutorial for method 2 above - but I wasnt able to find it at the moment. It may not have been for maya but it would still work. I think it was a "joan of arc" character and it looked pretty good. If I find it I'll post it!
