To create a head which is the easiest way to get to grips with things, I seen alot of tutorials that use nurbs I am sure that maybe the best way, but arnt pollys easier ? The thing is I am mildy dislexic and I cant follow some tutorials to well, this is why I like this site so much due to the video tutorials.
