You can delete UV sets really easily. Just select the UV set in the UV Texture Editor (Image > UV Sets), then select Delete Current UV Set under the File menu.

I think you may have gotten the extra UV sets from your planar projection options box. Scroll all the way to the bottom of the dialog and uncheck Create New UV Set.
