Nurbs are actually rendered out as polys anyway, so it wouldn't really make a difference. If you think it's taking too long to render certain nurbs objects, you can change the tesselation if you like so they won't be as smooth when rendered. As for moving around in your scene while working, nurbs are generally better because it's easier to display geometry based upon a curve than it is from polygonal faces usually. Also, nurbs makes the file size of your mb file smaller as opposed to polygons. ;-)
