Hey Bullet

take a second to stand back, you want the cockpit to be seperate mesh from the fuselage, so they have to end up (no matter how you originate the geometry) as seperate meshes.

You want them to match the curvature of the fuselage as well, forget nurbs and curves, use your fuselage polys as the starting point, extrude faces or edges, extract then tweak.
