There is a hotkey editor in Maya, which I believe has a printable version. Also, you can search for hotkeys and assign your own. I don't believe there is a default hotkey for extrude otherwise it would listed beside the menu item, but you can assign your own, just query your choice of keys to see if they are already bound to something else.
