Default Big problem with a simple project

Hi guys, im new here in this site and modeling with maya.
im from sweden so dont complane about the spellings and the grammar
I just started modeling a head and a problem came up.

First of all and maybe the simplest question: why is there so
many "s" symbols in my model? everytime i drag the model to get
a better shape. another s comes up.

Second question: why is the "control vertex" action not there all the time? for every move i do it dissapears and i have to rightclick on the model and so on to get it back.

Third question: Please teach me some basic shortcuts with the keys.
