This sounds like a stupid question and it is....but is there any difference between me creating say for instance a nurbs plane in dynamics mode VS a nurbs plane in modelling mode....

The maya fundamentals book I'm going through at the moment says..."make sure you're in modelling mode and then select....etc etc.."

But if I use the hotbox I still can create a nurbsplane in dynamics mode or whichever mode.....

any difference?

no, no difference. The HotBox is an advanced tool for doing just that... making use of all your menu selections at once, rather than one section at a time.
