This course will look in the fundamentals of modeling in Maya with an emphasis on creating good topology. It's aimed at people that have some modeling experience in Maya but are having trouble with complex objects.

pre-rigged models

I come from a 2D animation background and need to produce new demo material so I can find a job, but don't have enough time to learn character modelling in-depth at the moment. I'm trying to focus on actual animation... Does anybody know where I can find some simple, rigged characters to use for animation?

You could create the most basic of basic models. And rig it fairly easily. I did that with a stick figure like charactor. Only takes about 20 minutes.
