. As for the rotation of the wing, can you add joints running along the top of the wing, middle, and bottom.. then just have all of those branch into one where you can move it from? So select the whole wing up into the end joint where it moves into, and it should fold properly... repeat process for extra bends in the wing. Correct me if im wrong.
