Renders + Low Res Mesh -- How many is too few polygons?

(Restructured the post)

Epic Games' renders usually appear to contain ~5000 polygons for a low-poly mesh. I'm mostly curious for reasons of final product distortion when I should just cut off the low polygon model and start working on a high-resolution mesh to compliment my mesh.

Also, how will vertex animation cause distortion on the normal mapping. In this case the armor's vertices will not actually shift except for some spongie sections so not so much worries here... its mostly later for the arms, face, and later on flexible tubing (drier hose for example) and anything else decided later on.

Apologies for the bump -- its recently been rewritten hopefully to make it more clear what I was actually looking for (and also not as ugly with 2 renders right at the beginning)
