drawing polygons

Hi everyone

Been away for a long time, came back to Maya 2015 and lots of changes, I used to be able to easily draw extra poly edges onto my mesh as I built it, now this multi cut tool has appeared and seems clumsy and not what I want...is there a work around ?

If that scares you try Maya 2017. I popped on it the other day and felt like a total noob. I could not find a bunch of tools I am used to like cutting planes and such. I feel like I will have to relearn a lot.
