Hi chillhead,
I too am new to 3D and learning modeling. From my perspective, I would start off with whatever modeling tutorials came with your software (Goto Help Menu and select Maya Help, or you press F1 I think). They are extremely basic and will give you some fast results.

Then, I recommend downloading the free tutorials from Simply Maya like the Cartoon Dog and the Basic Human Modeling tutorial by Kurt B. MAKE SURE YOU READ THE NEW FEATURES SECTION that came with your software too because menu items in the tutorials may be in different places than in your version of Maya.

nurbs or polys are really a personal choice, I believe. I like Polys more, myself, but whatever you find you can model more accurately is the best choice.
I'm a noob to Modelling, so if this feels wrong to you, please
disregard.
also, why the periods, are you nervous? =D
