Maya 2020 fundamentals - modelling the real world
Get halfway through a model and find it's an unworkable mess? Can't add edge loops where you need them? Can't subdivide a mesh properly? If any of this sounds familiar check this course out.

I think the easiest way to do that would be have a paint effects tree, convert to polys and have the actual leaves as nCloth material, I recently looked at doing a similar thing at uni, how much do you know about using nCloth/do you have Maya 8.5 or higher?

you could also just model the leaves and then add a dynamic to it. like turbulence or anything else and see which works well and accordingly animate one of the parameters.
