This course contains a little bit of everything with modeling, UVing, texturing and dynamics in Maya, as well as compositing multilayered EXR's in Photoshop.
i dont know if there is a tut but you could just use spheres for stars and set their shader's glow value to about .4 or .5 so they "light up" and use larger spheres for planets
