Maya Textures to Photoshop

In the Free Video Tutorial Alpha Channels:
The Textures that are used in Maya are all in one Picture!
The textures of the pants and tex of the shoes...
How do i do that? Because when i could work with this technic i would have it a lot easier to make better textures...

Hope it isn't that hard to create it, and not that stupid question.

you have to edit the UV's of the model to map it correctly to the texture.. you could have multiple models used with one texture..

I tried, but i think i need more hints...
If i wanna make a texture of let's say a wall...
Can Maya create a Picture, where I have a flat perspective of the wall, so i can put in Photos and crop(or what i want to do with it) it like i want to have it?
Or must i create the Picture in Photoshop and then can put it there?(I know there is also this way but i wanna know if the first works somehow)
