This course will look in the fundamentals of modeling in Maya with an emphasis on creating good topology. It's aimed at people that have some modeling experience in Maya but are having trouble with
complex objects.
going back to the original question (i have't read all the replies so sorry if it got answered) you don't need to split the grass into separate planes. You can paint a "baldness" map:
no probs, seems silly to have to create more GEO when there is already a method there to do it. One of those weird maya things though where if you don't know it's there....
