skeleton

I'm making a skeleton and I select the bottom joint, the toe, and I press up. It continues to select one more each time I press it until I get up to where it connects to the butt and then it selects the whole thing if I press up again. I just need it to select one more. Do I need to adjust something in the Hypergraph?

You're selecting up the skeleton heirarchy(sp). In the vast majority of cases, the Pelvis is the top of the skeleton chain and controls the whole thing. So, when you get to it, it selects the entire skeleton.

What exactly are you trying to do?
