Maya 2020 fundamentals - modelling the real world
Get halfway through a model and find it's an unworkable mess? Can't add edge loops where you need them? Can't subdivide a mesh properly? If any of this sounds familiar check this course out.

If you're going for correct proportions then you might want to consider redoing this using references.

Yeah I agree, I really wouldnt worry about the use of Z right now, I think you need to take a few steps back and refine your proportins at a lot lower resolution and build it up again, and as Gohan has suggested use plenty of references

Feet
Lower legs
Chest
