Beer glass scene creation
This course contains a little bit of everything with modeling, UVing, texturing and dynamics in Maya, as well as compositing multilayered EXR's in Photoshop.

is there a way to freeze a nurb surface

Display -> Object Display -> Template
and to reverse the operation
Display -> Object Display -> Untemplate
But that makes the object showing as wireframe.

Better way would be to create a layer. Put the planes in the layer and set it's mode to R (whatever it stands for?)
