glad your having fun with it.
Yup its ok to animate directly on joints after bind.
If you want to make selection realllly easy:
-Create a selection curve e.g. a box and name it (X is allways the axis that faces down a joint chain to make sure its the same for the control curve)

-copy the name of the shape node e.g.
kirby_r_arm_crvShape

-select the joint you want it to be a controller for and type: parent -r -s kirby_r_arm_crvShape; -r stands for relative and -s stands for shape node.

Other way i like to do is a hierarchichal control rig, but thats only really really needed if lots of influences are being swapped around.

UPDATE: might do solid snake (MGS) but i dont like the super smash brothers brawl version

(@ BennyK, I might have a pop at alien kirby later (ive never actually seen the alien movies or alien V predator)

I wanted all the kirbys in one place and wanted to see of they all have the same style so i made this:
