Rigging wierd shaped eyeballs

I was just wondering about how there are 3d anime characters. Do you model the eyes to fit the shape of the design, or does the eye have to be round? When you rig the round eyes its pretty easy, it just goes around behind the skin, but when you do it with a wierdly shaped eye, it protrudes outside the skin when you twist and turn.

What's anyone here's input on this?

One way I can think of would be to model a sphere as the eye, create a lattice deformer, and using the deformer, shape the eyeball to fit your character. When you rotate it, it should follow the shape of the deformer.
