I made one of these when I was just starting to learn Maya a few years ago, I would advise you to get some Image Plane references to work too or I think you will struggle with the anatomy.

well jsprogg is totaly right he's helped me with my dragon model and it turning up really well, so just like browse online for human anatomy and animals for wings to get u wat you need.

Here is an image which might help you a little with your edge flow and anatomy, it's not great cause I modelled this a long time ago but might be of use to you .
