UV's tell Maya where to place the textures. If you have the UVs mapped, then you can make a texture that fits your model perfectly.

I've not really used a lot of the tools, but some of them are really handy. user added image UV Editor panel is cool, too. Has commands for flipping UVs and lots of other stuff.
