Over the last couple of years UV layout in Maya has changed for the better. In this course we're going to be taking a look at some of those changes as we UV map an entire character

Projection texture mapping

Hi, Im in the process of creating my own head, and am now at the point of projecting my photo referannce images onto the front and side.
I did the front first and that worked fine, but when I came to do the side projection the image is now crooked on the geometry (see image). Ive used a checker to show the problem more clearly. If the projection was working correctly then the checkers would be straight.

Any tip, help or advice would be greatly appreciated as I am at a total loss.

You'll need to do more than simple projections from the front and sides and actually map individual groups of faces on the model. You should check out the UV mapping tutorial vids for a good explanation on mapping a head.
