Logo N-Gon Issue

I am working with a logo. The spline has been extruded, but the face is a huge n-gon.

I want to work with the logo by doing an animation where large chunks break apart then come back to form the logo. But not random chunks. I want to specify parts and keep it neat, so I need quads. Yet when I try to connect the verts with the multicut tool, I can't because of that n-gon.

I even created the logo from scratch using quad draw. Any suggestions?
